Easy and Delicious Vegan Banana Bread

1/3 cup oil (safflower works well)
1/2 cup sugar
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 tablespoon cinnamon
2-3 ripe bananas mashed
1/2 cup soymilk
2 teaspoons vanilla extract
1/2 cup chopped walnuts (optional)
Preheat oven to 350 degrees
Oil an 8 x 4 inch bread pan.
Cream together the oil and sugar.
In a separate bowl combine flour, baking powder, baking soda, and cinnamon. Stir this into the sugar-margarine mixture.
Add the remaining ingredients and mix well.
Pour into the pan and bake for 40-50 minutes.
